Waikoloa

We’ve decided to stay here in Waikoloa.  I mean “shtay,” live here.  Yeah, that’s what happens to people who love Hawaii.  We think about moving here.  Everyone has their favorite island, favorite spot.  Ours is Waikoloa.

We have a quick breakfast in the room.  I make a pot of coffee and we have some muffins and juice.  Today will be beach and pool all day! We rent a boogie board to use as both a flotation device for me and a vehicle for Hubs to pull me out to where the good fish live.

Hubby is fearless in the water, but I am always overly cautious, nervous a little bit until I get the feel of it.  As we float above Fish City, we spot Convict Tang, Domino Fish,  Wrasse, Urchins, Coral, Brain Coral, even a flight of Barracuda swims by in formation.

As we swim further out to the buoy we aren’t supposed to pass, the sun hits a bank of white coral that is dotted with hundreds of Yellow Tang.  We linger above for many minutes holding hands.  It is the most beautiful thing I have ever seen.  A  white cathedral of yellow Tang.  Auwe!

A little further on back towards shore we see a nest of Sea Turtles just lurking on the bottom.  Every once in awhile one of them will come up for air.  One turtle comes up right in front of my mask and blows out some bubbles before he surfaces.  I almost choke because it’s hard to laugh under water with a snorkel on.   We head back to shore, Hubby pulling me through the surf and currents like an Iron Man.

Back on land I notice the beginnings of sun poisoning.  I must resolve to sit in the shade.  I head for the pool deck while Hubs rents a windsurf.  With a view of the ocean before me, I try to concentrate on the book I have been reading.  But every time I look up there is a 50/50 chance that Hubs will be up flying that windsurfer over the water.  The other 50% he is falling again.  I am amused.

Tonight is dinner at Canoe House over at the Mauna Lani.  The restaurant itself is set dramatically overlooking the surf below.  There is both outside and inside seating, but it is windy, so anyone who wants an outside table will have to put up with it.  A cute little blond surfer girl seats us out of the wind on our own private porch outside, but out of the wind.

All the waiters here are a cut above anything we’ve seen before.  They are all beautiful no matter what sex and they seem to be both college educated and world traveled.  Very smart!  Our server has  a Masters in Psychology.  Isn’t that the perfect training for a waiter?

The food is Asian Fusion.  We love it!  Hawaiian-Asian-Thai-Italian… with some Mexican thrown in.  We order a bottle of Sonoma County Wine.

  • Thai Corn Clam Chowder
  • Salad Greens with Ham Julienned served in a Tostada Shell with  Leek Vinaigrette
  • Mahi Mahi in a Bird’s Nest of Crispy Fried Potatoes with Corn Cilantro Relish, Pesto and Leek Sauce
  •  Trio of  Sorbets: Passion Fruit, Coconut, and Meyer Lemon

We meander back through the lighted pathways of the resort holding hands and being thankful… Waikoloa.
